Almost Healthy Chewy Chocolate Chip Cookies

I love chewy chocolate chip cookies.  I'm just not a crispy, cookie kind of girl. Over the years I have perfected a chewy, chocolate chip cookie recipe.
Enter healthy lifestyle changes.  Ack, what to do? Get to work!   I've spent 2 years experimenting and now, today, I share with you my healthier, but still chewy, yummy chocolate chip cookies.
These use healthier fats, and 1/3 of the fat of the original recipe.  They have half the sugar but more fiber and they are whole grain.  Not bad for a cookie, right?
Here is the new and improved recipe:
1/4 c. coconut oil
3/4 c. demererra sugar (or natural sugar of your choice)
1/4 c. raisins super finely chopped
1 tsp. vanilla
2 eggs
1 c. ground oat flour
(you can grind oat groats in a mill, or grind old fashioned oats in your blender)
1 1/4  c. soft white wheat flour
1 1/2 tsp baking soda
1/2 c. chocolate chips
1/4 c. chopped raw cashews (optional)
1/2 c. unsweetened coconut

In a large mixing bowl cream butter, coconut oil, sugar, raisins and vanilla.  After it's creamed, add eggs and mix well.  Add all dry ingredients as well as chocolate chips.  Dough will be fairly sticky
Place dough in the refrigerator for 1 hour.
Roll in teaspoon size balls and place on parchment lined baking sheet.  Bake at 350' for 9 minutes.  Remove from pan to cool.

The refrigeration part is critical because wheat flour takes time to hydrate.  The dough will be more manageable after an hour in the fridge and the cookies will be more tender with less flour.

Some people groan when they see raisins, trust me, don't skip them.  Chop them very fine and they aren't really noticeable except in adding chewy, moistness to your cookies.

Pour some cold milk and enjoy!!
