I've been experimenting with different quinoa recipes lately and love these quinoa bites. You can find the recipe here I just changed it a bit to my liking.
Quinoa Bites
2 cups cooked quinoa2 eggs
1 cup shredded carrot
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
3/4 cup grated Parmesan cheese
2 TBS whole wheat flour
1/2 tsp salt
1/4 tsp pepper
Mix all ingredients and then put 1 TBS in greased mini muffin tins. Cook at 350 for 20 min
The original recipe recommends a dip to dip them in and she thinks they are like tater tots. If you are expecting tater tots you will be disappointed. I ate them plain and think they would make a great side dish. YUM!
